Scrumptious Recipes Perfect For Iftar!

Meals vary from one place to another for Muslims breaking their fast throughout Ramadan. Of course, it is ideal to break the fast with 3 dates, as it is an act of sunnah. Inevitably, we would want to indulge in a meal afterwards. But fasting the whole day doesn’t entitle us to overeat, in fact we should still be mindful of what we put on our plates.

It’s not wrong to indulge in delicious meals but keep it moderate and most importantly as healthy as it can be. Here are some recipe ideas that are simple yet healthy and wholesome for your iftar!

FRUIT INFUSED WATER

Before you reach for sweet drinks to quench your thirst after a whole day of fasting, why not try fruit infused water? This is extremely simple and easy to do and a nice alternative to plain water. But it’s important to use fresh and good quality fruits. The great thing about this is that you can get creative and choose to include any fruits of your choice. Here are some suggestions.

Lemon Mint

Cut about 5 slices of lemon, and add it to a 1 litre water jug. Add about 8 muddled fresh mint leave, and fill it with water. Gently stir it and leave it in the fridge for at least 4 hours or overnight.

Watermelon Mint

Add about 1 cup of chopped fresh watermelon to a 1 litre water jug, and about 15 muddled leaves of mint and water. Store in the refrigerator overnight or 4 hours to infuse.

Strawberry Watermelon

Add about 1 cup of watermelon and about 10 fresh strawberries that are washed and sliced into a 1 litre jug. Fill it with water and infuse it overnight or for 4 hours in the refrigerator.

CHICKEN QUESADILLAS

INGREDIENTS

  • 2 teaspoons of vegetable oil
  • 350g of chicken breast (or beef), chopped
  • ½ cup water
  • 10 flour tortillas
  • Grated cheddar cheese (amount depends on you, the cheesier, the better!)
  • 1 red or green bell pepper, sliced
  • 2 medium tomatoes, diced
  • Taco seasoning
  • Garlic powder
  • Salt and pepper to taste

INSTRUCTIONS

1.Saute the chicken, red (or green) bell pepper separately with vegetable oil, taco seasoning and salt and pepper to your preferred taste

2.Place a tortillas and sprinkle cheese (as much as you’d like) on the surface before adding equal amounts of the sautéed ingredients and fresh tomatoes.

3.Place another tortilla on top, and gently toast it in a frying pan, toasting both sides until the cheese melts.

4.When done, cut quesadillas into wedges and serve with a dipping of your choice (guacamole, sour cream, salsa).

GREEN MAC & CHEESE (by Buzzfeed Tasty)

This Green Mac & Cheese is WAY better than eggs and ham. 💁🏻‍♀️ . . Ingredients (for 12 servings): 4 cups fresh spinach, packed ½ cup fresh parsley 2 ½ cups milk, divided 5 qt water 1 tablespoon salt 1 lb elbow macaroni ¼ cup butter ¼ cup flour 2 teaspoons garlic powder 2 teaspoons onion powder 1 teaspoon paprika 1 teaspoon pepper 1 teaspoon salt 1 lb white cheddar cheese ½ cup mozzarella cheese . . Preparation: 1. In a food processor, combine the spinach, parsley, and ½ cup (120 ml) milk, and process until evenly mixed. 2. In a large pot, bring water and 1 tbsp salt to a boil over high heat. Add the elbows and cook until al dente, roughly 6-7 minutes. Rinse with cold water and drain. 3. In a large pot, combine the butter and flour on medium-high heat, and stir until the mixture has become golden brown. 4. Add 2 cups (470 ml) milk, garlic powder, onion powder, paprika, pepper, and salt to the pot and stir until well incorporated. 5. Add in the cheddar cheese and mix until well incorporated. 6. Add in the spinach mixture and stir until fully incorporated and the green color is consistent. 7. Mix in the pasta and pour into a casserole dish. 8. Top the macaroni with mozzarella and broil for 5 minutes. 9. Enjoy!

Looking for a chip substitute? These Garlic Parmesan Zucchini Chips might do the trick! 😊 . . Ingredients (for 2 servings) ZUCCHINI CHIPS * 2 large zucchinis * 2 cups bread crumbs * ¾ cup parmesan cheese * ⅓ cup fresh basil, chopped * 1 tablespoon garlic powder * ½ teaspoon salt * 1 teaspoon pepper * 1 ½ teaspoons red pepper flakes * 2 eggs – SAUCE * ⅓ cup mayonnaise * 1 tablespoon lemon juice * 1 tablespoon garlic powder * ½ teaspoon salt * 1 teaspoon pepper – Preparation * Cut off top and bottom of zucchinis and slice zucchinis into ½ – ¼ inch (6-12 cm) slices. * In a small bowl, whisk eggs together. * Preheat oven to 450ºF (230ºC). * In a large bowl, mix together bread crumbs, parmesan cheese, basil, red pepper flakes, pepper, garlic powder, and salt. * Take a zucchini slice and dip it in egg wash, then coat it in bread crumb mix, coating all sides and patting mixture onto both side, then place the slice on a large baking sheet. Repeat for all slices. * Bake in oven for 15-20 minutes or until chips are golden brown. Flip halfway through. * In a small bowl, mix together mayonnaise, lemon juice, garlic powder, salt, and pepper. * Serve with dipping sauce. * Enjoy!
